Couserans Gastronomy

The Couserans is an outstanding terroir where gastronomy is a way of life. Taste the famous Bethmale cheese (semi-hard pressed), the Couserans croustade with apples, or azinat — the emblematic dish of the valley. The Saturday market in Saint-Girons and the summer market in Massat overflow with mountain charcuterie, honey and local wines.
